GOAT CHEESE EMPANADAS

2 refrigerator rolled pie crusts

4 oz. fresh goat cheese

Preheat oven to 375 degrees.

Using a 3-inch round cookie cutter, cut out 16 circles from pie crusts.

Divide goat cheese among the circles.

Lightly dot edges of dough with water, fold in half, and press with fork to seal.

Bake on rimmed baking sheet until golden, 20 to 25 minutes.

Serve with corn salsa.
